This is an ancient recipe for dandelion flower wine. It is a refreshing spring tonic. Dandelion flowers are full of health giving properties due to their high anti oxidant profile. They are excelent for digestive health and have perported benefits for eyesight and vision as well as protect against aging. They are excellent for the liver and posses hepatoprotective properties.

Take your kids for a walk and let them fill up bags so you can make this remedy. You need to be able to store and leave it for a year before its at its full maturity.

How to make Dandelion Flower Wine

Ingredients

  • 2 kg fresh dandelion flowers with as much green removed as possible

  • 3.8 Litres filtered water

  • 1 kg sugar

  • 1 lemon

  • 1 tbsp activated yeast

Method

  1. Leave the flowers for an hour or so to let the bugs crawl out (yes your wild foraging these so bugs are part and parcel)

  2. Place the flowers in a large pan and add the water

  3. Simmer for 1 hour and then strain

  4. Add the sugar and stir well to disolve then allow to cool to blood temperature

  5. Add the activated yeast and then transfer to a large mason jar and cover with a cloth and an elastic band and leave to ferment for 4-5 days

  6. Pour into bottles and leave in a cool dry place for a year to age and mature. drink the following spring.

As this is a herbal wine it is not suitable for children, pregnant women or those with liver or kidney disease or recovering alchoholics.
