How to make Dandelion Flower Wine
Ingredients
2 kg fresh dandelion flowers with as much green removed as possible
3.8 Litres filtered water
1 kg sugar
1 lemon
1 tbsp activated yeast
Method
Leave the flowers for an hour or so to let the bugs crawl out (yes your wild foraging these so bugs are part and parcel)
Place the flowers in a large pan and add the water
Simmer for 1 hour and then strain
Add the sugar and stir well to disolve then allow to cool to blood temperature
Add the activated yeast and then transfer to a large mason jar and cover with a cloth and an elastic band and leave to ferment for 4-5 days
Pour into bottles and leave in a cool dry place for a year to age and mature. drink the following spring.
Dandelion wine suitability
As this is a herbal wine it is not suitable for children, pregnant women or those with liver or kidney disease or recovering alchoholics.
