How to Make Elderflower Fizz
Ingredients
4 litres filtered water
250g sugar
7 Elderflower heads
2 Lemons
2 tbsp apple cider vinegar
Method
Boil the water in a pan then pour it into a large mason jar with a lid
Stir in the sugar and allow the mixture to cool.
Add the elderflower heads, sliced lemons and vinegar and cover the glass jar with a cloth and elastic band lid and leave for 24 hours to infuse.
strain the mixture with a siv and put the liquid back in the large mason jar or a bottle with a lid and leave for 7- 10 days. each day lift the lid for a couple of seccons so the mixture doesnt fizz out.
This mixture can be kept in the fridge for about a week after and is best sipped cold over ice
