This Lemon Pistachio butter tastes like earthy heaven and is highly nutritious


Pistachios originate from the Middle East and Asia. They are a good source of protein and are one of the highest sources of Vitamin B6 available. B6 is an important part of forming haemoglobin that is essential to carrying oxygen around the blood. Because they are also full of fibre they also support gut health and aid with weightloss. Pistachios also contain L-argenine which is converted to nitric acid in the body which helps keep blood vessels functioning well.

How to make this Nut Butter

Ingredients

  • 250g or 2 cups of raw shelled pistachio nuts

  • Juice of 1 Lemon

  • 1/2 tsp of sea salt

Tools

  1. food processor

  2. spatula

  3. Jar with lid


Method

  1. Place the pistachios into the bowl of the food processor and process for 5 minutes pausing to scrape down the bowl with the spatula as often as neccesary untill a powder forms

  2. Add the lemon juice and continue processing for a further 15 mins. Initially the butter will take a dough like consistancy then appear whipped before taking on the classic nut butter consistancy. Continue pausing and scraping the bowl down as necessary

  3. Place in a jar and store in the fridge for upto 5 days
